Ingredients
- Brown rice - 1 cup
- Water - 2 cups
- Poi - 1/2 cup
- Coconut milk - 1/2 cup
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Sea salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear.
- In a medium pot, combine the rinsed brown rice and 2 cups of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat a small skillet over medium heat and add a splash of coconut milk.
- Add minced garlic and chopped green onion to the skillet, sautéing until fragrant, about 2-3 minutes.
- In a mixing bowl, combine the cooked rice, poi, sautéed garlic and onion, remaining coconut milk, lime juice, sea salt, and black pepper. Stir until well combined.
- Serve warm, garnished with fresh cilantro on top.
