Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Poi - 1/2 cup
  • Coconut milk - 1/2 cup
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Sea salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed brown rice and 2 cups of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, heat a small skillet over medium heat and add a splash of coconut milk.
  5. Add minced garlic and chopped green onion to the skillet, sautéing until fragrant, about 2-3 minutes.
  6. In a mixing bowl, combine the cooked rice, poi, sautéed garlic and onion, remaining coconut milk, lime juice, sea salt, and black pepper. Stir until well combined.
  7. Serve warm, garnished with fresh cilantro on top.
