Ingredients

  • Spinach - 100 grams
  • Green peas - 50 grams
  • Boiled potatoes - 100 grams
  • Chickpea flour (besan) - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, finely chopped
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Garam masala - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil - for shallow frying

Steps

  1. Blanch the spinach in boiling water for 2-3 minutes, then drain and cool. Squeeze out excess water and chop finely.
  2. In a mixing bowl, mash the boiled potatoes and add the blanched spinach, green peas, chickpea flour, ginger, garlic, green chili, cumin powder, coriander powder, garam masala, salt, black pepper, and fresh coriander leaves.
  3. Mix all the ingredients thoroughly until well combined. If the mixture is too wet, add a little more chickpea flour.
  4. Divide the mixture into equal portions and shape them into flat patties.
  5. Heat oil in a pan over medium heat. Once hot, carefully place the patties in the pan.
  6. Fry the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.
  7. Remove the kababs from the pan and place them on a paper towel to absorb excess oil.
  8. Serve hot with mint chutney or yogurt dip.
