This Vegan Indian Halwa is a delightful, warm dessert made from semolina, sweetened with jaggery and enriched with the flavors of cardamom and nuts. It's a comforting treat that is not only delicious but also easy to prepare.

Ingredients

  • Semolina - 100 grams
  • Jaggery (grated) - 80 grams
  • Coconut milk - 200 ml
  • Ghee (or coconut oil for vegan) - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Mixed nuts (almonds, cashews, walnuts) - 30 grams
  • Raisins - 20 grams
  • Water - 200 ml

Steps

  1. Heat the ghee (or coconut oil) in a pan on medium heat.
  2. Add the semolina and roast it until it turns golden brown, stirring continuously (about 5-7 minutes).
  3. In a separate pot, bring the water and coconut milk to a boil.
  4. Once boiling, add the grated jaggery and stir until it dissolves.
  5. Slowly pour the hot liquid mixture into the roasted semolina, stirring continuously to avoid lumps.
  6. Add the cardamom powder and mix well, allowing it to cook for 5-7 minutes until it thickens.
  7. In the last few minutes of cooking, add the mixed nuts and raisins.
  8. Once cooked, remove from heat and let it sit for a couple of minutes before serving.
