Halwa
This Vegan Indian Halwa is a delightful, warm dessert made from semolina, sweetened with jaggery and enriched with the flavors of cardamom and nuts. It's a comforting treat that is not only delicious but also easy to prepare.

Ingredients
- Semolina - 100 grams
- Jaggery (grated) - 80 grams
- Coconut milk - 200 ml
- Ghee (or coconut oil for vegan) - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Mixed nuts (almonds, cashews, walnuts) - 30 grams
- Raisins - 20 grams
- Water - 200 ml
Steps
- Heat the ghee (or coconut oil) in a pan on medium heat.
- Add the semolina and roast it until it turns golden brown, stirring continuously (about 5-7 minutes).
- In a separate pot, bring the water and coconut milk to a boil.
- Once boiling, add the grated jaggery and stir until it dissolves.
- Slowly pour the hot liquid mixture into the roasted semolina, stirring continuously to avoid lumps.
- Add the cardamom powder and mix well, allowing it to cook for 5-7 minutes until it thickens.
- In the last few minutes of cooking, add the mixed nuts and raisins.
- Once cooked, remove from heat and let it sit for a couple of minutes before serving.
