- Khoya (dried milk) - 100 grams
- All-purpose flour - 2 tablespoons
- Baking powder - 1/4 teaspoon
- Ghee (clarified butter) - for frying
- Sugar - 150 grams
- Water - 200 milliliters
- Cardamom pods - 2, crushed
- Rose water - 1 tablespoon
- Saffron strands - a pinch (optional)
Steps
- In a saucepan, combine sugar, water, crushed cardamom, and rose water. Bring to a boil and simmer for 10 minutes to make the syrup. Set aside.
- In a mixing bowl, crumble the khoya and add all-purpose flour and baking powder. Mix well until it forms a soft dough.
- Divide the dough into small portions (about the size of a marble) and roll them into smooth balls.
- Heat ghee in a deep frying pan over medium heat. Once hot, reduce the heat to low.
- Carefully add the balls to the hot ghee, frying them in batches. Fry until they turn golden brown, ensuring even cooking.
- Once fried, remove the balls and drain excess ghee on a paper towel.
- While still warm, soak the fried balls in the prepared sugar syrup for at least 30 minutes to absorb the flavors.
- Serve warm or at room temperature, garnished with saffron strands if desired.
