Ingredients

  • Khoya (dried milk) - 100 grams
  • All-purpose flour - 2 tablespoons
  • Baking powder - 1/4 teaspoon
  • Ghee (clarified butter) - for frying
  • Sugar - 150 grams
  • Water - 200 milliliters
  • Cardamom pods - 2, crushed
  • Rose water - 1 tablespoon
  • Saffron strands - a pinch (optional)

Steps

  1. In a saucepan, combine sugar, water, crushed cardamom, and rose water. Bring to a boil and simmer for 10 minutes to make the syrup. Set aside.
  2. In a mixing bowl, crumble the khoya and add all-purpose flour and baking powder. Mix well until it forms a soft dough.
  3. Divide the dough into small portions (about the size of a marble) and roll them into smooth balls.
  4. Heat ghee in a deep frying pan over medium heat. Once hot, reduce the heat to low.
  5. Carefully add the balls to the hot ghee, frying them in batches. Fry until they turn golden brown, ensuring even cooking.
  6. Once fried, remove the balls and drain excess ghee on a paper towel.
  7. While still warm, soak the fried balls in the prepared sugar syrup for at least 30 minutes to absorb the flavors.
  8. Serve warm or at room temperature, garnished with saffron strands if desired.
