Ingredients
- Colocasia leaves - 4 large
- Besan (gram flour) - 50 grams
- Rice flour - 25 grams
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Ginger paste - 1 teaspoon
- Garlic paste - 1 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 tablespoon
- Coconut (grated) - 30 grams
- Oil - 2 tablespoons
- Water - 100 ml
Steps
- Wash the colocasia leaves thoroughly and pat them dry. Trim the stems and set aside.
- In a mixing bowl, combine besan, rice flour, turmeric powder, red chili powder, coriander powder, cumin powder, ginger paste, garlic paste, salt, and lemon juice.
- Gradually add water to the mixture to form a smooth paste. It should be thick enough to spread but not too watery.
- Add grated coconut to the paste and mix well.
- Take one colocasia leaf and place it on a flat surface, shiny side up. Spread a layer of the spice paste evenly over the leaf.
- Place another colocasia leaf on top of the first leaf and repeat the spreading process. Continue layering until you have 2-3 leaves stacked with the spice paste in between.
- Roll the layered leaves tightly to form a cylindrical shape. Use kitchen twine or thread to secure the roll.
- Repeat the process with the remaining leaves and paste.
- In a steamer, add water and bring it to a boil. Place the rolled colocasia leaves in the steamer basket and cover.
- Steam the rolls for about 20-25 minutes until cooked through.
- Remove the rolls from the steamer and let them cool slightly before slicing into rounds.
- Heat oil in a pan over medium heat. Place the sliced rounds in the pan and shallow fry until golden brown on both sides.
- Serve hot with lemon wedges or coriander chutney.
