Ingredients

  • Zucchini - 2 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1 teaspoon or to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Wash the zucchini thoroughly and slice them into 1/2-inch thick long strips.
  2. In a mixing bowl, combine olive oil, turmeric powder, cumin powder, coriander powder, red chili powder, garam masala, salt, and lemon juice to create a marinade.
  3. Add the zucchini strips to the marinade and toss gently to coat them evenly. Let them marinate for at least 15 minutes.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Place the marinated zucchini strips on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
