  • Cherry tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, garam masala, turmeric powder, cumin powder, salt, and black pepper to create a marinade.
  2. Add the diced bell peppers, zucchini rounds, cubed eggplant, red onion wedges, and cherry tomatoes to the marinade and toss to coat evenly. Let marinate for at least 15 minutes.
