Steps
- Clean and prepare the quail by removing any feathers and innards, then rinse them under cold water.
- In a bowl, mix together ginger paste, garlic paste, turmeric powder, cumin powder, coriander powder, chili powder, lemon juice, coconut oil, salt, and black pepper to create a marinade.
- Coat the quail thoroughly with the marinade, cover, and let it marinate in the refrigerator for at least 1 hour (or overnight for deeper flavor).
- While the quail is marinating, prepare the mint chutney by blending fresh mint leaves, cilantro leaves, green chili (if using), and water until smooth. Adjust salt to taste.
- Preheat a grill or grill pan over medium-high heat.
- Once the quail has marinated, skewer them onto soaked wooden skewers or metal skewers.
- Grill the quail skewers for about 5-7 minutes on each side, or until they are cooked through and have a nice char.
- Remove from the grill and let them rest for a few minutes before serving.
