  • Chili powder - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh mint leaves - 1/4 cup
  • Fresh cilantro leaves - 1/4 cup
  • Green chili - 1 small (optional)
  • Water - 2 tablespoons (for chutney)

Steps

  1. Clean and prepare the quail by removing any feathers and innards, then rinse them under cold water.
  2. In a bowl, mix together ginger paste, garlic paste, turmeric powder, cumin powder, coriander powder, chili powder, lemon juice, coconut oil, salt, and black pepper to create a marinade.
  3. Coat the quail thoroughly with the marinade, cover, and let it marinate in the refrigerator for at least 1 hour (or overnight for deeper flavor).
  4. While the quail is marinating, prepare the mint chutney by blending fresh mint leaves, cilantro leaves, green chili (if using), and water until smooth. Adjust salt to taste.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Once the quail has marinated, skewer them onto soaked wooden skewers or metal skewers.
  7. Grill the quail skewers for about 5-7 minutes on each side, or until they are cooked through and have a nice char.
  8. Remove from the grill and let them rest for a few minutes before serving.
  9. Serve the grilled quail skewers with the mint chutney on the side.
