- Olive oil - 2 tablespoons (30ml)
- Lemon juice - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh coriander - for garnish
Steps
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Allow them to sit for about 10 minutes to draw out excess moisture.
- In a bowl, mix together olive oil, lemon juice, minced garlic, garam masala, turmeric powder, cumin powder, salt, and black pepper to create a marinade.
- Rinse the eggplant slices under cold water to remove the salt and pat them dry with a paper towel.
- Coat each eggplant slice with the marinade, ensuring they are well covered. Let them marinate for at least 15 minutes.
- Preheat the grill or a grill pan over medium heat.
- Place the marinated eggplant slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- Remove the grilled eggplant from the grill and garnish with fresh coriander before serving.
