Ingredients

  • Eggplant - 1 medium-sized (about 250g)
  • Olive oil - 2 tablespoons (30ml)
  • Lemon juice - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - for garnish

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Allow them to sit for about 10 minutes to draw out excess moisture.
  2. In a bowl, mix together olive oil, lemon juice, minced garlic, garam masala, turmeric powder, cumin powder, salt, and black pepper to create a marinade.
  3. Rinse the eggplant slices under cold water to remove the salt and pat them dry with a paper towel.
  4. Coat each eggplant slice with the marinade, ensuring they are well covered. Let them marinate for at least 15 minutes.
  5. Preheat the grill or a grill pan over medium heat.
  6. Place the marinated eggplant slices on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  7. Remove the grilled eggplant from the grill and garnish with fresh coriander before serving.
