Ingredients

  • Basmati rice - 150 grams
  • Lamb, cut into pieces - 300 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Saffron strands - a pinch
  • Ghee or vegetable oil - 3 tablespoons
  • Water - 300 milliliters
  • Salt - to taste
  • Whole spices (bay leaf, cardamom, cloves, cinnamon stick) - 1 each

Steps

  1. Wash the basmati rice under cold water until the water runs clear and soak it in water for 30 minutes.
  2. In a large pot, heat ghee or oil over medium heat. Add whole spices and sauté for a minute until fragrant.
  3. Add sliced onions and cook until golden brown, then add ginger-garlic paste and sauté for another minute.
  4. Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft.
  5. Add lamb pieces and cook for 5-7 minutes until they are browned. Then, add yogurt, biryani masala, cilantro, and mint leaves. Mix well and cover the pot. Cook for 15 minutes on low heat, stirring occasionally.
  6. In a separate pot, bring 300 ml of water to a boil. Add the soaked rice with a pinch of salt and cook until it's 70% done. Drain and set aside.
  7. Layer the partially cooked rice over the meat in the pot. Dissolve saffron in a tablespoon of warm water and drizzle it over the rice. Cover the pot tightly with a lid.
  8. Cook on low heat for 25-30 minutes to allow the flavors to meld and the rice to finish cooking.
  9. Remove from heat and let it rest for 10 minutes before serving. Fluff the biryani gently and serve hot with raita or salad.
