- Chicken thighs - 400 grams, boneless and skinless
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1-inch piece, grated
- Green chilies - 2, slit
- Tomato - 1 medium, chopped
- Salt - 1 teaspoon, or to taste
- Water - 300 ml
- Fresh coriander leaves - for garnish
Steps
- Heat coconut oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chilies, cooking for another 2-3 minutes until fragrant.
- Add the chopped tomatoes and salt, cooking until the tomatoes soften and release their juices.
- In a dry skillet, toast the following spices until fragrant: 1 teaspoon cumin seeds, 1 teaspoon coriander seeds, 1 teaspoon black peppercorns, 2-3 dried red chilies, and 1 teaspoon poppy seeds (optional). Let them cool, then grind into a fine powder.
- Add the chicken thighs to the pan, cooking until they are browned on all sides.
- Stir in the ground spice mixture and cook for 2 minutes to coat the chicken.
- Pour in the water, bring to a boil, then reduce heat and simmer for 30 minutes until the chicken is cooked through and tender.
- Adjust salt to taste and garnish with fresh coriander leaves before serving.
