Steps
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves, chopped onions, and sauté until the onions are translucent.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add chopped tomatoes and cook until they soften, about 5 minutes.
- Mix in coriander powder, cumin powder, turmeric powder, and salt. Stir well and cook for 2 minutes.
- Add the mixed vegetables and sauté for 5 minutes, ensuring they are well coated with the spices.
- Pour in the coconut milk and bring to a gentle simmer. Cover and cook for 15 minutes until the vegetables are tender.
- Sprinkle garam masala over the curry, stir, and cook for another 2 minutes.
- Garnish with fresh coriander leaves before serving. Serve hot with rice or bread.
