Ingredients

  • Gluten-free pizza base - 1 medium (approx. 30 cm)
  • Prawns, deveined and cleaned - 200 grams
  • Coconut oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Tomato, chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Green chili, chopped - 1, adjust to taste
  • Goan masala (or curry powder) - 1 tablespoon
  • Coconut milk - 100 ml
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Mozzarella cheese, shredded - 100 grams
  • Salt - to taste
  • Lime juice - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, grated ginger, and chopped green chili. Sauté for another minute until fragrant.
  4. Stir in the chopped tomato and cook until soft. Add the Goan masala and salt, mixing well.
  5. Add the prawns to the pan and cook until they turn pink, about 3-4 minutes. Pour in the coconut milk and simmer for another 2 minutes, then remove from heat.
  6. Spread the prawn mixture evenly over the gluten-free pizza base.
  7. Top with shredded mozzarella cheese and sprinkle with chopped coriander leaves.
  8. Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and golden.
  9. Remove the pizza from the oven and drizzle with lime juice before slicing.
