- Basmati rice - 1 cup
- Water - 2 cups
- Ghee (vegan option) - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cloves - 3
- Cardamom pods - 2
- Onion (finely sliced) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green chilies (slit) - 1
- Frozen peas - 1/2 cup
- Salt - to taste
- Fresh coriander leaves (chopped) - for garnish
- Cashew nuts - 2 tablespoons
- Raisins - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat 2 tablespoons of vegan ghee over medium heat. Add cumin seeds, bay leaf, cloves, and cardamom pods, and sauté until fragrant.
- Add the sliced onion and sauté until golden brown. Then, add minced garlic, grated ginger, and slit green chilies, and cook for another minute.
- Stir in the frozen peas and sauté for 2-3 minutes.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices.
- Pour in 2 cups of water and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-18 minutes, or until the rice is tender and water is absorbed.
- In a small pan, dry roast the cashew nuts and raisins until golden and fragrant, then set aside.
- Once the rice is cooked, fluff it gently with a fork. Serve hot, garnished with roasted cashews, raisins, and chopped coriander leaves.
