Ghee Rice

Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Ghee (vegan option) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cloves - 3
  • Cardamom pods - 2
  • Onion (finely sliced) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Green chilies (slit) - 1
  • Frozen peas - 1/2 cup
  • Salt - to taste
  • Fresh coriander leaves (chopped) - for garnish
  • Cashew nuts - 2 tablespoons
  • Raisins - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat 2 tablespoons of vegan ghee over medium heat. Add cumin seeds, bay leaf, cloves, and cardamom pods, and sauté until fragrant.
  3. Add the sliced onion and sauté until golden brown. Then, add minced garlic, grated ginger, and slit green chilies, and cook for another minute.
  4. Stir in the frozen peas and sauté for 2-3 minutes.
  5. Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices.
  6. Pour in 2 cups of water and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-18 minutes, or until the rice is tender and water is absorbed.
  7. In a small pan, dry roast the cashew nuts and raisins until golden and fragrant, then set aside.
  8. Once the rice is cooked, fluff it gently with a fork. Serve hot, garnished with roasted cashews, raisins, and chopped coriander leaves.
