- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/4 teaspoon
- Cumin seeds - 1/2 teaspoon
- Salt - to taste
- Oil - 1 tablespoon
Steps
- Heat the oil in a pan over medium heat and add the cumin seeds. Let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until it becomes translucent.
- Stir in the grated ginger and slit green chili, cooking for an additional minute.
- Add the grated carrots and turmeric powder, mixing well to combine all ingredients.
- Cover the pan and cook for about 5 minutes, stirring occasionally until the carrots begin to soften.
- Add the chopped fenugreek leaves and salt to taste. Mix everything together and cook for another 3-4 minutes until the methi is wilted and the flavors meld.
- Serve hot as a side dish with roti, paratha, or rice.
