Steps
- Begin by washing the carrots thoroughly and then grate them using a grater or food processor.
- In a heavy-bottomed pan, heat 1 tablespoon of ghee over medium heat.
- Add the grated carrots to the pan and sauté for 5-7 minutes until they soften slightly.
- Pour in the low-fat milk and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, stirring occasionally.
- Once the milk has reduced and thickened, add honey and cardamom powder, mixing well.
- In a separate pan, lightly toast the chopped almonds and cashews until golden brown, then add them along with the raisins to the halwa.
- Cook for an additional 5 minutes, stirring frequently until everything is well combined and the halwa reaches your desired consistency.
- Serve warm, garnished with extra nuts if desired.
