- Carrots (grated) - 300 grams
- Low-fat milk - 250 ml
- Ghee (clarified butter) - 1 tablespoon
- Jaggery (grated) - 50 grams
- Cardamom powder - 1/4 teaspoon
- Almonds (chopped) - 2 tablespoons
- Cashews (chopped) - 2 tablespoons
- Raisins - 1 tablespoon
- Saffron strands - a pinch
- Salt - a pinch
Steps
- In a heavy-bottomed pan, heat the ghee over medium heat.
- Add the grated carrots and sauté for about 5 minutes until they soften.
- Pour in the low-fat milk and bring it to a boil, then reduce the heat to low.
- Simmer the mixture, stirring occasionally, until the milk reduces and thickens (about 20 minutes).
- Add the grated jaggery, cardamom powder, and a pinch of salt, mixing well.
- Continue to cook for another 5 minutes until the jaggery melts and is fully incorporated.
- Add the chopped almonds, cashews, raisins, and saffron strands, stirring to combine.
- Cook for an additional 5 minutes until the halwa reaches a desired consistency.
- Remove from heat and let it cool slightly before serving.
