Gajar Ka Halwa

Ingredients

  • Carrots (grated) - 300 grams
  • Low-fat milk - 250 ml
  • Ghee (clarified butter) - 1 tablespoon
  • Jaggery (grated) - 50 grams
  • Cardamom powder - 1/4 teaspoon
  • Almonds (chopped) - 2 tablespoons
  • Cashews (chopped) - 2 tablespoons
  • Raisins - 1 tablespoon
  • Saffron strands - a pinch
  • Salt - a pinch

Steps

  1. In a heavy-bottomed pan, heat the ghee over medium heat.
  2. Add the grated carrots and sauté for about 5 minutes until they soften.
  3. Pour in the low-fat milk and bring it to a boil, then reduce the heat to low.
  4. Simmer the mixture, stirring occasionally, until the milk reduces and thickens (about 20 minutes).
  5. Add the grated jaggery, cardamom powder, and a pinch of salt, mixing well.
  6. Continue to cook for another 5 minutes until the jaggery melts and is fully incorporated.
  7. Add the chopped almonds, cashews, raisins, and saffron strands, stirring to combine.
  8. Cook for an additional 5 minutes until the halwa reaches a desired consistency.
  9. Remove from heat and let it cool slightly before serving.
