- Carrots - 400 grams, grated
- Almond milk - 300 ml
- Coconut oil - 2 tablespoons
- Jaggery (or brown sugar) - 50 grams, grated
- Cardamom powder - 1/2 teaspoon
- Cashews - 2 tablespoons, chopped
- Raisins - 2 tablespoons
- Salt - a pinch
Steps
- In a large pan, heat the coconut oil over medium heat.
- Add the grated carrots to the pan and sauté for about 5-7 minutes until they soften.
- Pour in the almond milk and bring the mixture to a boil.
- Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes until the milk is mostly absorbed.
- Add in the grated jaggery, cardamom powder, and a pinch of salt, stirring well to combine.
- Continue to cook for another 5 minutes, allowing the jaggery to melt completely.
- In a separate small pan, lightly toast the chopped cashews and raisins until golden, then add them to the halwa.
- Mix everything thoroughly and cook for an additional 2-3 minutes.
- Remove from heat and serve warm, garnished with extra cashews if desired.
