Ingredients

  • Carrots - 400 grams, grated
  • Almond milk - 300 ml
  • Coconut oil - 2 tablespoons
  • Jaggery (or brown sugar) - 50 grams, grated
  • Cardamom powder - 1/2 teaspoon
  • Cashews - 2 tablespoons, chopped
  • Raisins - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a large pan, heat the coconut oil over medium heat.
  2. Add the grated carrots to the pan and sauté for about 5-7 minutes until they soften.
  3. Pour in the almond milk and bring the mixture to a boil.
  4. Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes until the milk is mostly absorbed.
  5. Add in the grated jaggery, cardamom powder, and a pinch of salt, stirring well to combine.
  6. Continue to cook for another 5 minutes, allowing the jaggery to melt completely.
  7. In a separate small pan, lightly toast the chopped cashews and raisins until golden, then add them to the halwa.
  8. Mix everything thoroughly and cook for an additional 2-3 minutes.
  9. Remove from heat and serve warm, garnished with extra cashews if desired.
