Ingredients

  • Green tomatoes - 2 medium-sized
  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large (or flax egg for vegan option)
  • Coconut oil - 1/4 cup (for frying)

Steps

  1. Slice the green tomatoes into 1/4 inch thick rounds and set aside.
  2. In a bowl, mix together almond flour, coconut flour, turmeric, cumin, salt, and black pepper.
  3. In a separate bowl, beat the egg (or prepare flax egg by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water and letting it sit for 5 minutes).
  4. Dip each tomato slice into the egg mixture, allowing excess to drip off, then coat thoroughly with the flour mixture.
  5. Heat coconut oil in a frying pan over medium heat until hot.
  6. Fry the coated tomato slices in batches for about 3-4 minutes on each side or until golden brown and crispy.
