- Fresh fish fillets (such as tilapia or cod) - 300 grams
- Coconut milk - 200 ml
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Green chilies - 2, slit
- Curry leaves - 10 leaves
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Coriander leaves - for garnish
- Oil (preferably coconut oil) - 2 tablespoons
Steps
- Heat the oil in a pan over medium heat and add the chopped onions. Sauté until they turn golden brown.
- Add the ginger-garlic paste and green chilies, and cook for another 2 minutes until fragrant.
- Stir in the chopped tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes become soft.
- Pour in the coconut milk and add the curry leaves. Bring the mixture to a gentle simmer.
- Once the coconut milk is simmering, carefully add the fish fillets. Cook for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from heat and drizzle lemon juice over the dish.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
