Ingredients

  • Basmati rice - 100 grams
  • Fresh white fish fillets (e.g., cod or tilapia) - 200 grams
  • Water - 600 ml
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro leaves - a handful, chopped (for garnish)
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, heat a tablespoon of oil over medium heat and sauté the chopped onion until translucent.
  3. Add the grated ginger, minced garlic, and slit green chili to the pot, stirring until fragrant.
  4. Stir in the chopped tomato, turmeric powder, cumin powder, coriander powder, salt, and black pepper; cook until the tomatoes soften.
  5. Add the soaked rice (drained) to the pot and mix well with the spice mixture.
  6. Pour in the water and bring to a boil. Reduce the heat, cover, and let it simmer for about 10 minutes.
  7. Gently place the fish fillets on top of the rice, cover, and cook for another 10 minutes until the fish is cooked through and the rice is fluffy.
  8. Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork.
  9. Serve hot, garnished with chopped cilantro and lemon wedges on the side.
