Ingredients

  • fish fillets (such as tilapia or cod) - 200 grams, cut into bite-sized pieces
  • whole wheat roti - 2 pieces, shredded
  • onion - 1 medium, finely chopped
  • carrot - 1 medium, grated
  • green bell pepper - 1 medium, diced
  • garlic - 2 cloves, minced
  • ginger - 1 teaspoon, minced
  • green chili - 1, sliced (adjust to taste)
  • curry powder - 1 teaspoon
  • cumin powder - 1/2 teaspoon
  • soy sauce - 1 tablespoon
  • coconut oil - 1 tablespoon
  • fresh coriander - a handful, chopped
  • salt - to taste
  • black pepper - to taste

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
  3. Add the green bell pepper and grated carrot. Cook for another 3-4 minutes until they soften.
  4. Stir in the sliced green chili, curry powder, and cumin powder. Cook for 1 minute to release the spices' aroma.
  5. Add the fish pieces to the skillet and cook for about 5-7 minutes until they are cooked through and flaky.
  6. Stir in the shredded roti and soy sauce, mixing well to combine all the ingredients.
  7. Cook for an additional 2-3 minutes, allowing the roti to absorb the flavors.
  8. Season with salt and black pepper to taste, and garnish with fresh coriander before serving.
