Ingredients

  • White fish fillets (like cod or tilapia) - 250 grams
  • Fresh spinach - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Coconut milk - 200 ml
  • Yogurt - 2 tablespoons
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Cooking oil (vegetable or ghee) - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the cooking oil in a large pan over medium heat. Add the chopped onion and sauté until golden brown.
  2. Add the minced garlic and grated ginger to the pan, cooking for another minute until fragrant.
  3. Stir in the turmeric, cumin, coriander, and red chili powder, cooking for 1-2 minutes to toast the spices.
  4. Add the spinach to the pan and cook until wilted, about 3-4 minutes.
  5. Pour in the coconut milk and stir well, allowing the mixture to simmer for about 5 minutes.
  6. Reduce the heat and add the yogurt, mixing until fully incorporated.
  7. Gently add the fish fillets to the pan, ensuring they’re submerged in the sauce. Cook for 6-8 minutes, or until the fish is cooked through and flakes easily.

  9. Garnish with fresh cilantro before serving.
