Ingredients

  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Tomato - 1 medium, pureed
  • Coconut milk - 200 ml
  • Vegetable oil - 2 tablespoons
  • Korma spice mix - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the finely sliced onions and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili; cook for 2 minutes until fragrant.
  4. Add the tomato puree and cook for another 3-4 minutes, stirring occasionally.
  5. Mix in the korma spice mix and turmeric powder; sauté for 1 minute to release the flavors.
  6. Lower the heat and add the yogurt, stirring continuously to prevent curdling.
  7. Once the yogurt is well combined, pour in the coconut milk and bring to a gentle simmer.
  8. Add the fish pieces, ensuring they are covered in the sauce, and cook for about 10-12 minutes, or until the fish is cooked through.
  9. Season with salt to taste and garnish with fresh coriander before serving.
