Ingredients

  • All-purpose flour - 150 grams
  • Fish fillet (cod or tilapia) - 100 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, finely chopped
  • Cilantro leaves - 2 tablespoons, chopped
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Water - as needed
  • Oil - for deep frying

Steps

  1. In a mixing bowl, combine the all-purpose flour and a pinch of salt. Gradually add water and knead until you form a smooth dough. Cover with a damp cloth and let it rest for 20 minutes.
  2. In a skillet, heat 1 tablespoon of oil over medium heat. Add the chopped onions and sauté until they are golden brown.
  3. Add the ginger-garlic paste and green chili, cooking for 1 minute until fragrant. Then, add the fish fillet, breaking it apart with a spatula.
  4. Sprinkle in the garam masala, turmeric powder, red chili powder, salt, and lemon juice. Cook until the fish is fully cooked and the mixture is well combined. Stir in the cilantro leaves and remove from heat. Let the filling cool.
  5. Divide the rested dough into equal balls (about 4). Roll each ball into a small circle on a floured surface, about 10 cm in diameter.
  6. Place a tablespoon of the fish filling in the center of each circle. Fold the edges over the filling to form a half-moon shape, sealing the edges by pressing them together.
  7. Heat oil in a deep pan for frying. Once hot, carefully lower the kachoris into the oil, frying them until golden brown and crispy on all sides. Drain on paper towels.
  8. Serve hot with mint chutney or tamarind sauce.
