Ingredients

  • Fish head (preferably from a firm fish like snapper) - 500 grams
  • Water - 1 liter
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1-inch piece, grated
  • Tomato - 1 medium, chopped
  • Green chilies - 1, slit (adjust to taste)
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a large pot over medium heat.
  2. Add chopped onions and sauté until they turn translucent.
  3. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add chopped tomatoes and slit green chilies, cooking until the tomatoes soften.
  5. Sprinkle in turmeric, coriander, cumin powder, and salt, stirring well to combine.
  6. Pour in the water and bring the mixture to a boil.
  7. Carefully add the fish head to the pot and reduce the heat to a simmer.
  8. Cover and let it cook for 25-30 minutes, allowing the flavors to meld and the fish to cook through.
  9. Once done, gently remove the fish head, check for bones, and return the meat to the soup.
  10. Garnish with fresh coriander leaves before serving.
