Ingredients

  • Fish (white fish like cod or tilapia) - 300 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Cilantro - a handful, chopped (for garnish)
  • Oil (coconut or olive) - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the oil in a pan over medium heat and add the chopped onion. Sauté until translucent.
  2. Add the minced garlic, ginger, and green chili to the pan, and cook for another 2 minutes until fragrant.
  3. Stir in the chopped tomato, turmeric powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften.
  4. Pour in the coconut milk and bring the mixture to a gentle simmer.
  5. Add the fish pieces to the pan, making sure they are submerged in the curry sauce. Simmer for about 10-12 minutes, or until the fish is cooked through and flakes easily.
  6. Finish with a squeeze of lemon juice and garnish with chopped cilantro before serving.
