  • Green chili - 1, slit (optional)
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Olive oil or coconut oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, grated ginger, and slit green chili; sauté for another minute until fragrant.
  3. Stir in the turmeric, coriander, and cumin powders, cooking for 30 seconds to release their flavors.
  4. Pour in the coconut milk and bring to a gentle simmer. Let it cook for about 5 minutes to thicken slightly.
  5. Add the fresh spinach and stir until wilted, about 2-3 minutes.
  6. Cut the fish fillets into bite-sized pieces and gently add them to the curry. Season with salt and cook for another 5-7 minutes until the fish is cooked through.
  7. Sprinkle with garam masala and stir gently. Cook for an additional minute.
