Ingredients

  • Squirrel - 2 whole (about 1 kg total)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Smoked paprika - 2 teaspoons
  • Cayenne pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 2 sprigs, chopped
  • Lemon - 1, juiced

Steps

  1. Begin by cleaning the squirrels, removing the fur, and gutting them. Rinse under cold water and pat dry.
  2. In a mixing bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, salt, black pepper, chopped rosemary, and lemon juice to create a marinade.
  3. Coat the squirrels thoroughly with the marinade, ensuring the mixture gets inside the cavity as well. Let them marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  4. Prepare a fire pit with medium-hot coals or wood and allow the flames to die down for a steady heat.
  5. Skewer the squirrels onto long sticks or use a grill grate for cooking over the fire. Roast them over the fire for approximately 20-30 minutes, turning occasionally, until the meat is cooked through and has a nice char.
  6. Once cooked, remove from the fire and let rest for 5 minutes before serving. Enjoy the fire-roasted squirrel with your choice of side dishes.
