Steps
- Begin by cleaning the squirrels, removing the fur, and gutting them. Rinse under cold water and pat dry.
- In a mixing bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, salt, black pepper, chopped rosemary, and lemon juice to create a marinade.
- Coat the squirrels thoroughly with the marinade, ensuring the mixture gets inside the cavity as well. Let them marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Prepare a fire pit with medium-hot coals or wood and allow the flames to die down for a steady heat.
- Skewer the squirrels onto long sticks or use a grill grate for cooking over the fire. Roast them over the fire for approximately 20-30 minutes, turning occasionally, until the meat is cooked through and has a nice char.
