Ingredients

  • Raw honey - 60 ml
  • Fresh lemon juice - 15 ml
  • Cinnamon stick - 1 piece
  • Ginger root - 5 grams, grated

Steps

  1. In a medium saucepan, combine the dried elderberries, water, cinnamon stick, and grated ginger.
  2. Bring the mixture to a boil over medium heat, then reduce to a simmer.
  3. Allow the mixture to simmer for about 20 minutes, or until the liquid has reduced by half.
  4. Remove from heat and strain the mixture through a fine mesh sieve into a bowl, discarding the solids.
  5. Stir in the raw honey and fresh lemon juice until fully dissolved.
  6. Let the syrup cool to room temperature, then transfer to a clean glass jar or bottle for storage.
