Ingredients

  • Tomato sauce - 100 ml
  • Mozzarella cheese - 100 grams

  • Onion - 1/2, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  4. Brush both sides of the eggplant slices with olive oil and place them on a baking sheet.
  5. Roast the eggplant in the preheated oven for 15 minutes until they are tender and slightly golden.
  6. Remove the eggplant from the oven and spread a thin layer of tomato sauce on each slice.
  7. Sprinkle garam masala, cumin powder, salt, and black pepper over the sauce.
  8. Top each slice with diced bell pepper, sliced onion, and mozzarella cheese.
  9. Return the topped eggplant to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro before serving.
