  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon

  • Fresh cilantro - 2 tablespoons, chopped
  • Mozzarella cheese - 100g, shredded
  • Almond flour - 1 cup (for low-carb pizza base)
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Italian herbs - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Prick the eggplant with a fork and roast it on an open flame or in the oven until the skin is charred and the flesh is soft (about 20-25 minutes).
  3. Once the eggplant is roasted, let it cool, then scoop out the flesh and mash it in a bowl.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
  5. Add the diced tomato, green chili, cumin powder, coriander powder, garam masala, and salt to the skillet. Cook for 5-7 minutes until the tomato softens.
  6. Stir in the mashed eggplant and cook for another 5 minutes, allowing the flavors to meld. Remove from heat and mix in the chopped cilantro.
  7. For the pizza base, in a bowl, combine almond flour, egg, baking powder, Italian herbs, and a pinch of salt. Mix well to form a dough.
  8. Line a baking tray with parchment paper and spread the dough into a circular shape (about 1/2 inch thick).
  9. Bake the pizza base in the preheated oven for 10-12 minutes until golden.
  10. Remove the base from the oven, spread the eggplant mixture evenly on top, and sprinkle the shredded mozzarella cheese over it.
  11. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
