Steps
- Preheat the oven to 200°C (400°F).
- Prick the eggplant with a fork and roast it on an open flame or in the oven until the skin is charred and the flesh is soft (about 20-25 minutes).
- Once the eggplant is roasted, let it cool, then scoop out the flesh and mash it in a bowl.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion is translucent.
- Add the diced tomato, green chili, cumin powder, coriander powder, garam masala, and salt to the skillet. Cook for 5-7 minutes until the tomato softens.
- Stir in the mashed eggplant and cook for another 5 minutes, allowing the flavors to meld. Remove from heat and mix in the chopped cilantro.
- For the pizza base, in a bowl, combine almond flour, egg, baking powder, Italian herbs, and a pinch of salt. Mix well to form a dough.
- Line a baking tray with parchment paper and spread the dough into a circular shape (about 1/2 inch thick).
- Bake the pizza base in the preheated oven for 10-12 minutes until golden.
- Remove the base from the oven, spread the eggplant mixture evenly on top, and sprinkle the shredded mozzarella cheese over it.
- Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the pizza cool for a few minutes before slicing and serving.
