- Basmati rice - 1 cup
- Water - 2 cups
- Eggs - 4 large
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, diced
- Ginger-garlic paste - 1 teaspoon
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Cooking oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the cooking oil over medium heat and add cumin seeds. Let them sizzle for a few seconds.
- Add the sliced onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
- Add the diced tomato, turmeric powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
- Meanwhile, boil water in a separate pot and gently add the eggs. Boil for 8-10 minutes, then cool them under cold water, peel, and set aside.
- Drain the soaked rice and add it to the pot with the onion-tomato mixture. Stir for 2-3 minutes, then add 2 cups of water and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it cook for 15 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, cut the boiled eggs in half.
- Once the rice is done, fluff it with a fork, gently mix in the garam masala, and place the halved eggs on top.
- Garnish with fresh coriander leaves and serve hot.
