Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Eggs - 4 large
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, diced
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Cooking oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the cooking oil over medium heat and add cumin seeds. Let them sizzle for a few seconds.
  3. Add the sliced onions and sauté until they turn golden brown.
  4. Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
  5. Add the diced tomato, turmeric powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
  6. Meanwhile, boil water in a separate pot and gently add the eggs. Boil for 8-10 minutes, then cool them under cold water, peel, and set aside.
  7. Drain the soaked rice and add it to the pot with the onion-tomato mixture. Stir for 2-3 minutes, then add 2 cups of water and bring to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and let it cook for 15 minutes or until the rice is tender and water is absorbed.
  9. While the rice is cooking, cut the boiled eggs in half.
  10. Once the rice is done, fluff it with a fork, gently mix in the garam masala, and place the halved eggs on top.
  11. Garnish with fresh coriander leaves and serve hot.
