- Basmati rice - 1 cup (200g)
- Eggs - 4 large
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Biryani masala - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Cooking oil - 3 tablespoons
- Salt - to taste
- Water - 2 cups (500ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, heat oil over medium heat. Add sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and green chili, sauté for another minute until fragrant.
- Stir in the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
- Add the biryani masala, cilantro, and mint leaves, cooking for 2 minutes.
- In a separate pot, boil water and add the soaked basmati rice. Cook until it's 70% done, then drain the rice.
- In the same pot with the masala, layer the partially cooked rice on top of the masala mixture.
- In a bowl, beat the eggs and pour them evenly over the rice layer.
- Cover the pot with a lid and cook on low heat for 10-15 minutes until the eggs are set and rice is fully cooked.
- Garnish with additional cilantro and mint before serving.
