- Cauliflower - 200 grams (riced)
- Eggs - 4 large
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Cilantro - 2 tablespoons, chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Olive oil - 1 tablespoon
- Cheese (mozzarella or cheddar) - 100 grams, shredded
- Bell pepper - 1/2, sliced
Steps
- Preheat the oven to 200°C (400°F).
- Rice the cauliflower using a food processor or grater until it resembles fine grains.
- In a bowl, mix the riced cauliflower with a pinch of salt and microwave for 5 minutes. Allow it to cool slightly.
- Once cooled, add 1 beaten egg and mix well to form a dough-like consistency. Press this mixture onto a baking sheet lined with parchment paper to form a pizza base.
- Bake the cauliflower crust in the preheated oven for 15 minutes until it is golden and firm.
- While the crust is baking, heat olive oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and green chili, sautéing until the onions are translucent.
- Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
- Add the remaining 3 beaten eggs to the pan and scramble them with the tomato mixture until fully cooked. Remove from heat and stir in the chopped cilantro.
- Once the crust is done baking, remove it from the oven and spread the egg bhurji mixture evenly over the crust.
- Top with shredded cheese and slices of bell pepper, then return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
- Remove from the oven, slice, and serve hot.
