Ingredients

  • Cauliflower - 200 grams (riced)
  • Eggs - 4 large
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 1 tablespoon
  • Cheese (mozzarella or cheddar) - 100 grams, shredded
  • Bell pepper - 1/2, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rice the cauliflower using a food processor or grater until it resembles fine grains.
  3. In a bowl, mix the riced cauliflower with a pinch of salt and microwave for 5 minutes. Allow it to cool slightly.
  4. Once cooled, add 1 beaten egg and mix well to form a dough-like consistency. Press this mixture onto a baking sheet lined with parchment paper to form a pizza base.
  5. Bake the cauliflower crust in the preheated oven for 15 minutes until it is golden and firm.
  6. While the crust is baking, heat olive oil in a pan over medium heat. Add cumin seeds and let them splutter.
  7. Add the chopped onions and green chili, sautéing until the onions are translucent.
  8. Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
  9. Add the remaining 3 beaten eggs to the pan and scramble them with the tomato mixture until fully cooked. Remove from heat and stir in the chopped cilantro.
  10. Once the crust is done baking, remove it from the oven and spread the egg bhurji mixture evenly over the crust.
  11. Top with shredded cheese and slices of bell pepper, then return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
  12. Remove from the oven, slice, and serve hot.
