- Eggs - 4 large

- Ginger - 1 tsp, grated
- Garlic - 1 tsp, minced
- Turmeric powder - 1/4 tsp
- Cumin seeds - 1/2 tsp
- Coriander powder - 1/2 tsp
- Garam masala - 1/4 tsp
- Fresh coriander leaves - 2 tbsp, chopped
- Salt - to taste
- Oil or ghee - 2 tbsp
Steps
- Heat oil or ghee in a non-stick pan over medium heat.
- Add cumin seeds and let them splutter, then add the chopped onion and sauté until translucent.
- Stir in the minced garlic, grated ginger, and chopped green chili; cook for another minute.
- Add the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
- In a bowl, beat the eggs and pour them into the pan. Stir continuously until the eggs are scrambled and cooked to your desired consistency.
- Sprinkle garam masala and chopped coriander leaves over the egg bhurji and mix well.
- Serve hot with toast or paratha.
