Ingredients

  • Eggs - 4 large

  • Green chili - 1, finely chopped
  • Ginger - 1 tsp, grated
  • Garlic - 1 tsp, minced
  • Turmeric powder - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Fresh coriander leaves - 2 tbsp, chopped
  • Salt - to taste
  • Oil or ghee - 2 tbsp

Steps

  1. Heat oil or ghee in a non-stick pan over medium heat.
  2. Add cumin seeds and let them splutter, then add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, grated ginger, and chopped green chili; cook for another minute.
  4. Add the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  5. In a bowl, beat the eggs and pour them into the pan. Stir continuously until the eggs are scrambled and cooked to your desired consistency.
  6. Sprinkle garam masala and chopped coriander leaves over the egg bhurji and mix well.
  7. Serve hot with toast or paratha.
