Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs, boneless - 250 grams
  • Plain yogurt - 100 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Green chili, slit - 1
  • Fresh cilantro, chopped - 2 tablespoons
  • Fresh mint leaves, chopped - 2 tablespoons
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cooking oil or ghee - 2 tablespoons
  • Salt - to taste
  • Water - 300 milliliters
  • Lemon juice - 1 tablespoon

Steps

  1. Wash the basmati rice in cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, salt, and lemon juice. Add the chicken and mix well to coat. Marinate for at least 30 minutes.
  3. In a large pot, heat the cooking oil or ghee over medium heat. Add the sliced onions and sauté until golden brown.
  4. Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 7-10 minutes.
  5. Stir in the chopped tomatoes, green chili, cilantro, and mint leaves. Cook for another 5 minutes until the tomatoes soften.
  6. Drain the soaked rice and add it to the pot. Pour in 300 ml of water and bring it to a boil.
  7. Once boiling, cover the pot with a tight-fitting lid and reduce the heat to low. Cook for 20 minutes without lifting the lid to allow the dum cooking effect.
  8. After 20 minutes, turn off the heat and let it sit for another 10 minutes before opening the lid.
  9. Fluff the biryani with a fork and serve hot, garnished with additional cilantro and mint if desired.
