Ingredients

  • Baby potatoes - 300 grams
  • Onion - 1 medium (finely sliced)
  • Tomato - 1 medium (chopped)
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1 (slit)
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cream - 2 tablespoons
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Wash and boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.
  2. In a heavy-bottomed pan, heat the cooking oil over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
  3. Add the ginger-garlic paste and slit green chili to the pan, and cook for another 2 minutes until fragrant.
  4. Mix in the chopped tomatoes and cook until they soften and the oil starts to separate.
  5. Stir in the coriander powder, red chili powder, turmeric powder, and salt. Cook for 2-3 minutes to blend the spices.
  6. Add the boiled baby potatoes to the pan, gently mixing them with the spice mixture to coat evenly.
  7. Cover the pan with a lid and reduce the heat to low. Let it 'dum' (steam) for about 15-20 minutes, stirring occasionally.
  8. After the cooking time, sprinkle garam masala and drizzle fresh cream over the dish. Mix gently.
  9. Garnish with fresh coriander leaves and serve hot with naan or rice.
