Ingredients

  • Baby Potatoes - 400 grams
  • Yogurt - 150 grams
  • Onion - 1 medium, finely sliced
  • Ginger-Garlic Paste - 1 tablespoon
  • Kashmiri Red Chili Powder - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon
  • Garam Masala - 1 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Fennel Powder - 1/2 teaspoon
  • Mustard Oil - 2 tablespoons
  • Salt - to taste
  • Water - 200 ml
  • Fresh Coriander - for garnish

Steps

  1. Wash and boil the baby potatoes in salted water until they are tender but not mushy, about 15-20 minutes. Drain and let them cool.
  2. Once the potatoes are cool, peel them and make 2-3 shallow slits on each potato for better absorption of flavors.
  3. In a pan, heat the mustard oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the sliced onions and sauté until they turn golden brown, about 5-7 minutes.
  5. Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.
  6. In a bowl, whisk together the yogurt, Kashmiri red chili powder, turmeric powder, garam masala, fennel powder, and salt.
  7. Reduce the heat to low and add the yogurt mixture to the pan, stirring continuously to prevent curdling.
  8. Add the boiled potatoes and 200 ml of water to the pan, ensuring the potatoes are coated with the gravy.
  9. Cover the pan with a lid and let it simmer on low heat for about 15-20 minutes, allowing the flavors to meld and the potatoes to absorb the spices.
  10. Garnish with fresh coriander before serving hot with naan or rice.
