- Baby potatoes - 500 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-garlic paste - 1 tablespoon
- Yogurt (dairy or plant-based) - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon (adjust to taste)
- Salt - to taste
- Fresh coriander leaves - for garnish
- Water - 1 cup
Steps
- Wash the baby potatoes thoroughly and boil them in salted water until fork-tender (about 15-20 minutes). Drain and let them cool. Once cooled, peel the potatoes and set aside.
- In a heavy-bottomed pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions to the pan and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.
- Add the pureed tomato and cook until the oil starts to separate from the mixture (about 5-7 minutes).
- Incorporate the yogurt, stirring continuously to avoid curdling, and then add the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook for another 2-3 minutes.
- Add the boiled potatoes to the mixture and coat them well with the spice gravy. Pour in water, cover the pan with a lid, and let it simmer on low heat for 10-15 minutes to allow the flavors to meld.
- Once done, sprinkle garam masala and garnish with fresh coriander leaves before serving.
