Ingredients

  • Baby potatoes - 500 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Yogurt (dairy or plant-based) - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon (adjust to taste)
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Water - 1 cup

Steps

  1. Wash the baby potatoes thoroughly and boil them in salted water until fork-tender (about 15-20 minutes). Drain and let them cool. Once cooled, peel the potatoes and set aside.
  2. In a heavy-bottomed pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely chopped onions to the pan and sauté until golden brown.
  4. Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.
  5. Add the pureed tomato and cook until the oil starts to separate from the mixture (about 5-7 minutes).
  6. Incorporate the yogurt, stirring continuously to avoid curdling, and then add the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook for another 2-3 minutes.
  7. Add the boiled potatoes to the mixture and coat them well with the spice gravy. Pour in water, cover the pan with a lid, and let it simmer on low heat for 10-15 minutes to allow the flavors to meld.
  8. Once done, sprinkle garam masala and garnish with fresh coriander leaves before serving.
