- Baby potatoes - 400 grams
- Tomato puree - 200 grams
- Onion - 1 medium, finely chopped
- Ginger - 1 inch, grated
- Garlic - 4 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Cooking oil - 2 tablespoons
- Cilantro - for garnish
- Water - 1 cup
Steps
- Wash and boil the baby potatoes in salted water until fork-tender, about 15 minutes. Drain and let them cool slightly, then peel the skin.
- In a pan, heat the cooking oil over medium heat. Add cumin seeds and sauté until they crackle.
- Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili, and cook for another 2 minutes.
- Add the tomato puree, coriander powder, cumin powder, turmeric powder, and salt. Cook this mixture for about 10 minutes until the oil separates from the masala.
- Add the boiled potatoes to the pan and gently mix them with the gravy, ensuring they are well coated.
- Pour in 1 cup of water and bring to a boil. Reduce the heat, cover the pan, and let it simmer for 10-15 minutes.
- Add garam masala and stir well. Cook for another 2 minutes.
- Remove from heat and garnish with chopped cilantro before serving.
