- Duck breast - 300 grams
- Coconut flour - 2 tablespoons
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large
- Coconut oil - 1 tablespoon (for cooking)
- Cucumber - 100 grams (for chutney)
- Fresh mint leaves - 10 grams (for chutney)
- Lemon juice - 1 tablespoon (for chutney)
- Salt - 1/4 teaspoon (for chutney)
Steps
- Start by finely chopping the duck breast and place it in a mixing bowl.
- Add coconut flour, coriander powder, cumin powder, garam masala, salt, black pepper, and the egg to the duck and mix thoroughly until well combined.
- Form the mixture into two patties and refrigerate for 10 minutes to firm up.
- While the patties are chilling, prepare the chutney by blending cucumber, mint leaves, lemon juice, and salt until smooth. Set aside.
- Heat coconut oil in a skillet over medium heat and cook the duck patties for 5-6 minutes on each side or until cooked through and golden brown.
- Once cooked, remove the patties and allow them to rest for a couple of minutes.
- Serve the duck burgers on plates with a generous spoonful of cucumber and mint chutney on top.
