Dhokla with Green Chutney

- Chickpea flour (besan) - 100 grams
- Yogurt - 50 grams
- Water - 100 ml
- Eno fruit salt - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 5 leaves
- Oil - 1 tablespoon
- Green chili - 1, chopped
- Coriander leaves - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine chickpea flour, yogurt, water, turmeric powder, and salt to make a smooth batter.
- Let the batter rest for 15 minutes to ferment slightly.
- Grease a steaming tray or a round plate and set it aside.
- Add Eno fruit salt to the batter and mix gently; it will become frothy.
- Pour the batter into the greased tray and steam it for 15-20 minutes until a toothpick comes out clean.
- While the dhokla is steaming, heat oil in a small pan and add mustard seeds and curry leaves.
- Once the mustard seeds start to splutter, add chopped green chili and sauté for a minute.
- Remove the dhokla from the steamer, let it cool slightly, and then cut it into squares.
- Drizzle the tempering over the dhokla and garnish with chopped coriander leaves.
- Serve hot with green chutney.
