Ingredients

  • Besan (gram flour) - 100 grams
  • Semolina - 50 grams
  • Yogurt - 100 grams
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Green chili (finely chopped) - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Salt - 1 teaspoon
  • Water - 150 ml
  • Oil - 1 tablespoon (for greasing)
  • Bell peppers (cubed) - 100 grams
  • Onion (cubed) - 50 grams
  • Tomato (cubed) - 50 grams
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Chat masala - 1 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a bowl, mix besan, semolina, yogurt, turmeric powder, baking soda, green chili, ginger, salt, and water to form a smooth batter. Let it rest for 15 minutes.
  2. Grease a steaming tray with oil and pour the batter into it evenly. Steam for 20 minutes until cooked through.
  3. Once done, let the dhokla cool for a few minutes before cutting it into cubes.
  4. In a separate bowl, mix the cubed bell peppers, onion, and tomato with coriander powder, cumin powder, chat masala, and a little salt.
  5. Preheat a grill or a grill pan on medium heat.
  6. Thread the dhokla cubes and marinated vegetables alternately onto the soaked skewers.
  7. Brush the skewers lightly with oil and place them on the grill. Cook for about 5-7 minutes, turning occasionally until charred and heated through.
  8. Remove from the grill and serve hot with green chutney or yogurt dip.
