- Ginger paste - 1 teaspoon
- Green chili, finely chopped - 1 small
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fruit salt (eno) - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Coriander leaves, chopped - 2 tablespoons
- Oil - 1 tablespoon
Steps
- In a mixing bowl, combine the chickpea flour, water, yogurt, ginger paste, green chili, turmeric powder, and salt to form a smooth batter.
- Allow the batter to rest for 15 minutes to ferment slightly.
- After resting, add the fruit salt to the batter and mix gently until incorporated.
- Grease a steaming tray or plate and pour the batter into it, spreading it evenly.
- Steam the batter in a steamer or on a pot with boiling water for 15 minutes or until a toothpick inserted comes out clean.
- In a small pan, heat oil and add mustard seeds; once they crackle, add curry leaves and sauté for a few seconds.
- Pour the tempering over the steamed dhokla and let it cool for a few minutes.
- Cut the dhokla into squares and garnish with chopped coriander leaves before serving.
