Ingredients

  • Chickpea flour (besan) - 100 grams
  • Water - 150 ml
  • Yogurt - 2 tablespoons
  • Ginger paste - 1 teaspoon
  • Green chili, finely chopped - 1 small
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fruit salt (eno) - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 10 leaves
  • Coriander leaves, chopped - 2 tablespoons
  • Oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the chickpea flour, water, yogurt, ginger paste, green chili, turmeric powder, and salt to form a smooth batter.
  2. Allow the batter to rest for 15 minutes to ferment slightly.
  3. After resting, add the fruit salt to the batter and mix gently until incorporated.
  4. Grease a steaming tray or plate and pour the batter into it, spreading it evenly.
  5. Steam the batter in a steamer or on a pot with boiling water for 15 minutes or until a toothpick inserted comes out clean.
  6. In a small pan, heat oil and add mustard seeds; once they crackle, add curry leaves and sauté for a few seconds.
  7. Pour the tempering over the steamed dhokla and let it cool for a few minutes.
  8. Cut the dhokla into squares and garnish with chopped coriander leaves before serving.
