Ingredients

  • Chickpea flour (besan) - 100 grams
  • Water - 150 ml
  • Lemon juice - 1 tablespoon
  • Epsom salt - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Grated ginger - 1 teaspoon
  • Green chili - 1, finely chopped
  • Vegetable oil - 1 tablespoon
  • Coriander leaves - 2 tablespoons, chopped
  • Bell peppers (red and yellow) - 1/2 each, cut into chunks
  • Cherry tomatoes - 6, halved
  • Zucchini - 1 small, cut into rounds
  • Green chutney - for serving
  • Wooden skewers - 4

Steps

  1. In a mixing bowl, combine chickpea flour, water, lemon juice, Epsom salt, turmeric powder, grated ginger, and chopped green chili. Mix until smooth and let it rest for 15 minutes.
  2. Add baking soda to the dhokla batter just before cooking, and mix well.
  3. Grease a steaming tray or dish with vegetable oil, pour in the dhokla batter, and steam for 15-20 minutes until a toothpick inserted comes out clean.
  4. Once cooked, let the dhokla cool slightly before cutting it into 2 cm cubes.
  5. Preheat your grill or BBQ. Thread the dhokla cubes, bell pepper chunks, cherry tomatoes, and zucchini rounds onto the wooden skewers alternately.
  6. Brush the skewers lightly with vegetable oil and grill them on medium heat for about 5-7 minutes, turning occasionally until they are slightly charred.
  7. Serve the dhokla skewers hot with green chutney for dipping.
