Ingredients
- Chickpea flour (besan) - 100 grams
- Water - 150 ml
- Lemon juice - 1 tablespoon
- Epsom salt - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Grated ginger - 1 teaspoon
- Green chili - 1, finely chopped
- Vegetable oil - 1 tablespoon
- Coriander leaves - 2 tablespoons, chopped
- Bell peppers (red and yellow) - 1/2 each, cut into chunks
- Cherry tomatoes - 6, halved
- Zucchini - 1 small, cut into rounds
- Green chutney - for serving
- Wooden skewers - 4
Steps
- In a mixing bowl, combine chickpea flour, water, lemon juice, Epsom salt, turmeric powder, grated ginger, and chopped green chili. Mix until smooth and let it rest for 15 minutes.
- Add baking soda to the dhokla batter just before cooking, and mix well.
- Grease a steaming tray or dish with vegetable oil, pour in the dhokla batter, and steam for 15-20 minutes until a toothpick inserted comes out clean.
- Once cooked, let the dhokla cool slightly before cutting it into 2 cm cubes.
- Preheat your grill or BBQ. Thread the dhokla cubes, bell pepper chunks, cherry tomatoes, and zucchini rounds onto the wooden skewers alternately.
- Brush the skewers lightly with vegetable oil and grill them on medium heat for about 5-7 minutes, turning occasionally until they are slightly charred.
- Serve the dhokla skewers hot with green chutney for dipping.
