Ingredients

  • Besan (gram flour) - 100 grams
  • Water - 150 ml
  • Eno fruit salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili paste - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Oil - 1 tablespoon (for greasing and cooking)
  • Cucumber - 1 small, sliced
  • Tomato - 1 small, sliced
  • Onion - 1 small, sliced
  • Coriander leaves - a handful, chopped
  • Green chutney - 2 tablespoons
  • Sweet tamarind chutney - 2 tablespoons
  • Lettuce leaves - 2 leaves

Steps

  1. In a mixing bowl, combine besan, turmeric powder, green chili paste, ginger paste, and salt. Gradually add water to form a smooth batter.
  2. Add Eno fruit salt to the batter and mix gently. You will see the batter fizz as it activates.
  3. Pour the batter into a greased steaming tray, spreading it evenly. Steam for 15-20 minutes or until a toothpick inserted comes out clean.
  4. Once steamed, let the dhokla cool for a few minutes, then cut into round patties using a cookie cutter.
  5. In a pan, heat a little oil and lightly toast the dhokla patties on both sides until they are golden brown.
  6. Assemble the burger by placing a dhokla patty on the bottom half of a plate or serving dish. Add lettuce, cucumber, tomato, and onion slices on top.
  7. Drizzle green chutney and sweet tamarind chutney over the vegetables, then top with another dhokla patty to complete the burger.
  8. Serve immediately and enjoy your Dhokla Burger!
