Ingredients
- Chickpea flour (besan) - 100 grams
- Yogurt - 50 grams
- Water - 100 ml
- Turmeric powder - 1/2 teaspoon
- Baking soda - 1/2 teaspoon
- Green chili (finely chopped) - 1
- Ginger (grated) - 1 teaspoon
- Salt - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 5-6 leaves
- Vegetable oil - 1 tablespoon
- Fresh coriander (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine chickpea flour, yogurt, water, turmeric powder, baking soda, chopped green chili, grated ginger, and salt. Mix well to form a smooth batter.
- Grease a small baking dish with oil and pour the batter into it, spreading it evenly.
- Bake in the preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.
- While the dhokla is baking, heat 1 tablespoon of vegetable oil in a small pan over medium heat.
- Add mustard seeds and let them splutter, then add curry leaves and sauté for a minute.
- Once the dhokla is done baking, remove it from the oven and immediately pour the tempered oil mixture over it.
- Drizzle lemon juice on top and garnish with fresh coriander before serving.
