Ingredients

  • Chickpea flour (besan) - 100 grams
  • Yogurt - 50 grams
  • Water - 100 ml
  • Turmeric powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Green chili (finely chopped) - 1
  • Ginger (grated) - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 5-6 leaves
  • Vegetable oil - 1 tablespoon
  • Fresh coriander (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine chickpea flour, yogurt, water, turmeric powder, baking soda, chopped green chili, grated ginger, and salt. Mix well to form a smooth batter.
  3. Grease a small baking dish with oil and pour the batter into it, spreading it evenly.
  4. Bake in the preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.
  5. While the dhokla is baking, heat 1 tablespoon of vegetable oil in a small pan over medium heat.
  6. Add mustard seeds and let them splutter, then add curry leaves and sauté for a minute.
  7. Once the dhokla is done baking, remove it from the oven and immediately pour the tempered oil mixture over it.
  8. Drizzle lemon juice on top and garnish with fresh coriander before serving.
