Ingredients

  • Basmati rice - 100 grams
  • Split yellow moong dal - 100 grams
  • Fresh methi (fenugreek) leaves - 50 grams, chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 small, chopped
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Water - 600 ml
  • Oil or ghee - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice and moong dal together under cold water until the water runs clear. Soak them in water for 15 minutes and then drain.
  2. In a pressure cooker or a large pot, heat oil or ghee over medium heat. Add cumin seeds and let them sizzle.
  3. Add chopped onions and sauté until they turn translucent. Then add grated ginger and slit green chili, sautéing for another minute.
  4. Stir in the chopped tomato and cook until it softens, then add turmeric powder and salt. Mix well.
  5. Add the chopped methi leaves and sauté for 2-3 minutes until they wilt.
  6. Add the drained rice and dal to the pot, stirring to combine with the spices and vegetables.
  7. Pour in 600 ml of water and give it a good stir. Close the lid of the pressure cooker and cook for 3-4 whistles, or if using a pot, cover and simmer for 15-20 minutes until the rice and dal are cooked through.
  8. Once done, release the pressure (if using a pressure cooker) and fluff the khichdi with a fork.
  9. Garnish with fresh coriander leaves and serve hot with yogurt or pickle.
