Ingredients
- Basmati rice - 100 grams
- Split yellow moong dal - 100 grams
- Fresh methi (fenugreek) leaves - 50 grams, chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 small, chopped
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Water - 600 ml
- Oil or ghee - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice and moong dal together under cold water until the water runs clear. Soak them in water for 15 minutes and then drain.
- In a pressure cooker or a large pot, heat oil or ghee over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onions and sauté until they turn translucent. Then add grated ginger and slit green chili, sautéing for another minute.
- Stir in the chopped tomato and cook until it softens, then add turmeric powder and salt. Mix well.
- Add the chopped methi leaves and sauté for 2-3 minutes until they wilt.
- Add the drained rice and dal to the pot, stirring to combine with the spices and vegetables.
- Pour in 600 ml of water and give it a good stir. Close the lid of the pressure cooker and cook for 3-4 whistles, or if using a pot, cover and simmer for 15-20 minutes until the rice and dal are cooked through.
- Once done, release the pressure (if using a pressure cooker) and fluff the khichdi with a fork.
- Garnish with fresh coriander leaves and serve hot with yogurt or pickle.
