Ingredients
- Moong dal (split green gram) - 100 grams
- Fresh methi (fenugreek leaves) - 50 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 400 ml
- Fresh cilantro - for garnish
Steps
- Rinse the moong dal thoroughly under running water until the water runs clear, then soak it in water for 15 minutes.
- In a pan, heat the cooking oil over medium heat and add cumin seeds. Once they start to sizzle, add the chopped onions and sauté until golden brown.
- Add the grated ginger, minced garlic, and slit green chili to the pan, cooking for another 2 minutes until fragrant.
- Stir in the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
- Add the soaked moong dal along with 400 ml of water. Stir well and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until the dal is cooked through.
- Once the dal is cooked, add the fresh methi leaves and garam masala. Cook for an additional 5 minutes, stirring occasionally.
- Adjust the consistency of the curry by adding more water if required. Taste and adjust salt if needed.
- Garnish with fresh cilantro and serve hot with rice or roti.
