Ingredients

  • Moong dal (split green gram) - 100 grams
  • Fresh methi (fenugreek leaves) - 50 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 400 ml
  • Fresh cilantro - for garnish

Steps

  1. Rinse the moong dal thoroughly under running water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pan, heat the cooking oil over medium heat and add cumin seeds. Once they start to sizzle, add the chopped onions and sauté until golden brown.
  3. Add the grated ginger, minced garlic, and slit green chili to the pan, cooking for another 2 minutes until fragrant.
  4. Stir in the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
  5. Add the soaked moong dal along with 400 ml of water. Stir well and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until the dal is cooked through.
  6. Once the dal is cooked, add the fresh methi leaves and garam masala. Cook for an additional 5 minutes, stirring occasionally.
  7. Adjust the consistency of the curry by adding more water if required. Taste and adjust salt if needed.
  8. Garnish with fresh cilantro and serve hot with rice or roti.
